Peanut Butter Balls – YUMMY!

I make Peanut Butter Balls every year {would make it more, but my girlish figure would explode}.  Actually, I make them a couple times during the holidays now.  A certain little person loves to eat Peanut Butter Balls as much as I do apparently.  They just don't last in our house anymore. They are so delicious!! I got this Peanut Butter Ball recipe from one of the gals I worked with years ago when I was nursing in British Columbia.  And boy, I'm so glad I did!! Holiday Appetizer Ideas

Our neighbors {who are our close friends} get together annually for a 'Holiday Progressive Dinner'.  Have you heard of them? Each household is responsible for a course of the dinner and you move on to the next and the next. This year, I am responsible for Appetizers! Kind of excited about this actually!  I'm not known for being a superb cook or chef like some of my culinary talented friends, but I think I'll be able to turn this one out and knock it out of the park with these following 5 Healthy Appetizers. Healthy Appetizer – So good you’ll leave with an empty plate!

This is my GO-TO recipe when I need to bring an appetizer to a party.  It is seriously easy and such a healthy appetizer!!! All you need is: Cherry tomatoes {halved} Cucumbers {2 or 3 peeled and sliced} Plain Cream Cheese {8 ounces} Mayonnaise {1 tbsp} Ranch seasoning mix {4 tsp} Fresh herb {I used fresh Thyme} Directions: Mix ranch seasoning, cream cheese, and mayonnaise until smooth in a bowl.  {I usually let the cream cheese warm up a little before mixing} Slice cucumbers thick enough to hold the cream cheese and tomato. Chick-fil-A officially has rolled out three new entrees – the Chick-fil-A® Grilled Chicken Sandwich, Chick-fil-A® Grilled Chicken Club Sandwich and Chick-fil-A® Grilled Nuggets – in an ongoing effort to provide more flavorful and “craveable” grilled options for its nutrition-minded customers. Healthy Greek Salad

This Greek Salad is low fat and one I started making back home in Canada. It's quick and very healthy! It’s super dooper EASY to make too! Ingredients for Greek Salad: 2 medium tomatoes 1 cucumber 3 oz of Feta Cheese 1/2 lemon 1 tsp Extra Virgin Olive oil Couple shakes of Basil Cut all the vegetables up in to bite sized cubes, put in to bowl. Add feta and basil.  Squeeze the juice from the lemon half Add the olive oil. Stir it up gently and serve. I love to make this Greek salad for myself for midday snack, lunch, or a side for dinner. Rice Krispie Ghosts

Rice Krispie treats with a twist! Fun to do with kids during Halloween!       So, I'm all for baking with kids cause I think it's fun ... and so do they!  They loved making these Rice Krispie Ghosts for Halloween out the Rice Krispie Treats cookbook I picked up.  They had a LOT of FUN eating it ... well, so did I!!!  It was so fun to actually have my oldest follow in the book what we needed to next, etc.  They are growing up too fast, and I know time just goes faster as they get older.  I'm finding that I take all these pics and they have just stayed in our computer.  This is such a great way for mom's to document their lives growing up so they … [Read more...]
